Gluten-Free (Shortcut) Zucchini Bread

We've got the perfect easy gluten free zucchini bread recipe that utilizes our famous golden cake mix as a base to pack in the flavor and cut down on prep. Say goodbye to zucchini overload and hello to a deliciously moist and gluten-free way to enjoy the fruits (well, vegetables) of your gardening labor! 🌱🍞

Cooking Time: 40-45 minutes or until toothpick tests dry
Prep Time: 5 minutes


  • 1 box of Addi's Golden Cupcake & Cake Mix
  • 1 cup eggs or egg alternative (approx. 4 large eggs)
  • 3/4 cup water
  • 3/4 cup oil
  • 2 cups zucchini, shredded


  1. Preheat the oven to 350 F.

  2. Mix eggs and water together in mixing bowl.

  3. Add entire package of golden cake mix to wet ingredients and beat at medium speed for 1 ½ minutes or until smooth.

  4. Pour batter 3/4 of the way into greased and floured loaf pan. Split batter into multiple pans depending on pan size used. 

  5. Bake 40-45 minutes. Let cool 3 minutes before removing from pan.
