Gluten-Free Peanut Butter Cookies

These cookies are made with simple GF ingredients you likely already have on hand that will turn out the perfect nostalgic crunchy gluten free pb cookie.


ALL YOU'LL NEED:

  • 1 1/2 cups Addi's All-Purpose Flour
  • 1/2 cup unsalted butter, room temp
  • 1 cup peanut butter
  • 1/2 cup brown sugar, lightly packed
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 large egg, room temp
  • 3/4 teaspoon baking powder


LET'S START BAKING!

  1. Preheat oven to 350 degrees.
  2. Sift flour and baking powder. Whisk to combine.

  3. Using an electric stand mixer with paddle attachment, cream butter and sugar together. Add peanut butter and mix until combined.

  4. Mix in egg and vanilla extract. Add flour mixture and beat until incorporated.

  5. Roll dough into 1″ thick balls. Place on baking sheet lined with parchment paper.

  6. Flatten cookies with a fork in cross-cross pattern. Bake for about 8 minutes. Allow cookies to cool completely on baking sheet. Enjoy!
