Gluten-Free Red Velvet Cupcakes
GF Red Velvet Cupcakes are the perfect valentine's day treat made even better with addictive about cream cheese frosting. This recipe is made even easier with Addi's Chocolate Cupcake & Cake Mix as a base.
ALL YOU'LL NEED:
Cake
- 1 box of Addi's Chocolate Cake Mix
- 1 cup sour cream
- 3 eggs
- 1/2 cup water
- 1/4 cup oil
- 1 ounce bottle red food coloring
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder
Frosting
- 1 (8-ounce) package cream cheese, room temperature
- 8 tablespoons butter, room temperature
- 2 cups confectioners sugar, sifted well
- 1 teaspoon vanilla extract
LET'S START BAKING!

Preheat oven to 350 degrees.
- In a large bowl, combine cake mix, sour cream, water, oil, food coloring, eggs, cocoa and vanilla. Mix with an electric mixer on low for 1-2 minutes. Scrape sides, then mix again for 2-3 more minutes.
- Spoon batter into 30 paper-lined muffin cups, filling each cup 2/3 full. Bake for about 30 minutes. Remove from oven and let cool for 10-15 minutes.
- For the frosting, put cream cheese and butter in large bowl. Mix with electric mixer about 30-45 seconds.
- Add confectioners sugar a little bit at a time, mix on low speed until sugar is totally blended. About 1-2 minutes. Add vanilla, mix on medium speed until fluffy. About 1-2 minutes more until smooth.
- Once fully cooled, spread cupcake tops with frosting, cake crumbs and a macaroon for that extra special touch. Enjoy!
